We still haven’t tried everything yet, but what we have tried has been delicious! I’m going through another round of chemo this week so we’re trying a different meal each evening. It’s definitely not a fair comparison to say you beat hospital food hands down, because these meals beat many freshly cooked restaurant meals hands down, too. Tonight was the Chicken Marsala with green beans and it was fabulous. The filet mignon was absolutely wonderful and we loved the chicken stew. Can’t wait to try the rest! “Let it snow, let it snow and my how it did snow during the recent holiday period. Getting to any grocery store was totally out of the question for this wimpy driver. After a couple of days neighbors would call asking if I needed any food. I could always respond, "No, thanks, I have plenty of food!" And, indeed I did. Chef Virginia had been to my home a couple of weeks before the snow arrived leaving me with soups, entrees with deliciously prepared meats and vegetables. I could just thaw (after making a careful selection from the varieties available in the freezer), heat and eat sitting by the festively lit Christmas tree. I survived by eating a variety of food and knew it was healthy as well as meeting the Swedish Medical Weight Loss Clinic's suggestions.
